I hope you’re ready for some major horseradish recipes.  In planning this post, I discovered 1 jar of horseradish in the refrigerator and 7 in the pantry.  (Yes, 7!!!!!!!).  I apologize in advance for the insane amount of 7’s (exclamation points, periods and repeated letters) in this post.  I can’t help myself.

Let’s be real… 7 jars of horseradish is just plain crazy talk. 😉  Nobody does that.  Well, almost nobody.

Can at least one of you tell me how that happens?  Please…….

This sandwich is sssssssooooooo good.  The potato chips add crunch (and a bit of salt) and the mustard/horseradish provides the flavor.

Do not worry! This is not a spicy sandwich despite the Extra Hot Horseradish. The flavors really mellow out when grilled.

Potato Chip Pastrami Grilled Cheese Sandwich | Inspiration KitchenI should’ve called this the Sorry 7 Sandwich, because I really feel bad about {{hoarding}} all that horseradish.  Imagine the…….S7S.  It sounds kinda cool on a menu, right?  I’d eat a sandwich like that.  “I’ll take the S7S, please”.  It’s like talking in food code.

Ok, here’s a layering trick.  After you’ve buttered the outside of your bread, slather the mustard/horseradish on the inside slice, then place the potato chips on it (the mustard/horseradish helps keep them in place).  Then, top the tater chips with your swiss cheese.  When that cheese melts, it’s going to lock those tater chips down to keep ’em from fallin’ out foreveh!  Smart, right?  Then the pastrami.  Now, you know the drill……. Grill.

OH!…you know why else I loved this?  Because you can use up all those nearly eaten bags of potato chips that you don’t want to throw out.  It gives great crunch to your sandwich and there’s no waste!


Potato Chip & Pastrami Grilled Cheese Sandwich
Recipe type: Main
Serves: 2
  • 2 tablespoons Dijon mustard
  • 2 teaspoons horseradish*
  • 4 slices light rye bread
  • 4 tablespoons butter, melted
  • 1 cup crushed potato chips
  • 6 slices swiss cheese
  • 6 slices pastrami
  1. Spray a large skillet with cooking spray. Set aside.
  1. Mix Dijon mustard and horseradish together until thoroughly mixed.
  1. Brush melted butter on one side (the outside) of each of the 4 slices of bread. Spread ½ of the mustard/horseradish sauce on one side (the inside) of two slices of the bread. Place ½ cup of the crushed potato chips on each slice of the bread with the mustard/horseradish on it. Top with three slices of cheese, then the pastrami. Top with the remaining slices of bread, butter on the outside of all slices.
  2. Grill over Medium-High heat (covered) on each side until browned and cheese is melted.
  3. Remove, cut in half and serve.
*I used Inglehoffer Extra Hot Horseradish

    How’s anyone else suppose to get ahold of horseradish if you are hoarding it all?! Haha I admit I buy way too many of the same product if I love it. I’m afraid of running out of anything. Maybe I need therapy? Either way, this sandwich looks delicious. I love all the ingredients and those crushed potato chips. Something about that crunch that just makes a sandwich awesome! Pinning

    Alright! Potato chips in your sandwich, I love it!! It’s so Ally Sheedy, Breakfast Club of you!! 😉 Oh, and hello fellow hoarder!! My husband is always cutting me off from buying certain items in the pantry or fridge. For some reason, he thinks 7 cartons of eggs or 12 boxes of cream cheese is excessive. I know: weird right?!! 😉

    lol! I have 8 jars of gros grained mustard in my cupboard if it makes you feel any better! I can’t wait to see all the horseradish recipes to come! If anyone can come up with a million ways to use horseradish, it’s you! This sandwich looks amazing! It’s a grownup grilled cheese! I’ll have to check the far reaches of my cupboards for horseradish so that I can whip this sandwich when my husband comes in town!

    Ummmmm … 7 jars?!?!? Girlfriend, I love me some horseradish, too. But SEVEN?!?!? We need to chat…

    Seriously, though – this looks killer-good. I have a secret/not-so-secret love affair with chips on sandwiches. I think it dates back to my college cheerleading days, when our lunch during all the long bus trips to games was a “boxed lunch” from dining services. The best way to pep up that turkey sandwich was to open the accompanying bag of chips and pile those crunchy chips on the sammy. We’re talking dining-hall-food-bliss (if that actually exists! 😀 )! I still love to pile crunchy chips on sandwiches (even if now they’re often whole-grain or baked chips – lol!). Of course, I’m totally pinning this! Yum!

    Hahaha that’s awesome that you have 7 jars of horseradish – I love me some horseradish too so keep ’em coming 🙂 I do the same with other things when they’re on sale or I don’t want to run out too. Whoa, now this is one good looking sandwich! Love the hidden chips and with the dijon and horseradish – so so good!
