This Rocky Mountain Salmon is easy to make and has amazing flavor with a glaze of soy sauce, brown sugar, butter, lemon and white wine.

Rocky Mountan Salmon | Inspiration KitchenThis recipe was given to me by a dear friend years ago, and it quickly became one of our favorites and a staple in our home.

We buy the large filets of salmon at Costco, cut them to our preferred serving size, then seal them and freeze them until we’re ready to use them.  Then, by just de-thawing, then marinating for 30 mins to 1 hour (or overnight), this salmon will bake up quickly and easily making weeknight dinner planning a complete breeze!

Rocky Mountain Salmon
This Rocky Mountain Salmon is flavorful, light and really easy to make as a weeknight meal. Serve with wild rice and vegetables for a healthy meal!
Recipe type: Main
  • ¼ cup firmly packed brown sugar
  • 2 tablespoons dry white wine
  • 2 tablespoons soy sauce
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 (2 pound) salmon fillet
  1. Combine brown sugar, wine, soy sauce, butter, and lemon juice together in a small bowl. Heat in the microwave on full power (100%) until boiling (roughly 2 minutes), stirring several times. Remove from microwave, and let sauce cool 10-15 minutes.
  2. Rinse salmon, pat dry, and cut into individual serving pieces. Pour marinade into an oven-safe dish. Place salmon in marinade and cover tightly. Refrigerate 30 minutes. Turn salmon over, recover and refrigerate another 30 minutes. (You can also cover and chill up to 1 day).
  3. Remove salmon from refrigerator and remove cover. Place salmon in a 375 degree oven and bake for 15-30 minutes *(see note), or until salmon is done throughout.
  4. Serve!

*My salmon was done in roughly 17 minutes, as it was a thinner cut. The length of cooking time will largely depend on your oven, and the thickness of your salmon filet. Just be sure that your salmon is done throughout the fish.
**I often make two batches of the marinade. One batch is used to marinate the fish in (as the recipe indicates); then, for the second batch, I just make the marinade so that it can be poured over each filet at serving time.

    Don’t even get me started about December calories!!!!! I’m in denial mode so I’m just going to blame my clothes and assume that they have shrunk because they don’t fit me anymore!!!! It has nothing to do with me putting on a crazy amount of weight because my face was drowning in Christmas cakes, fudges and brittles! hahahahha!!!!! I think I finally need to come to terms with the fact that it is a new year and start with my exercise stuff. (I’ve only been procrastinating since Jan 1) roflmfao! This dinner looks FABBBBBB Kristi!!!!!! That steam from the fish is making me drool!!!! I LOVE the combination of Soy sauce and brown sugar with savory foods and this just hits the right note!!! When we have to fix a quick dinner, we always make a coconut milk based curry with rice. It’s not really a curry, just coconut milk with garlic and kokam (it is an intensely sour red colored fruit that’s dried and added to coconut milk with spices) Doesn’t even require cooking!

      I know EXACTLY what you mean Samina. It is *so* not us – it’s definitely the shrinking clothes. Hahaha! Everyone knows that calories during the holidays don’t count! Hahaha! BTW, I adore curry and coconut rice. One of my very favorites. I’ve never had kokam before – I’m going to have to look at some of our specialty markets and see if we have it here!     Salmon is always one of our quick, healthy dinners over here, and when Costco has big wild salmon filets, I definitely buy it there! The flavors here are phenomenal, and I’m craving some salmon big time now. 🙂 Looking forward to the giveaway next week, and pinning this yummy supper!

      Hahaha! Do you have a recipe on your site for that Marissa? Because if you do, I’m looking it up so I can try it. I’m curious how you’re cooking your eggs – because we love eggs. Although I rarely have bread/toast in the house. Which is a bummer because we like it – I guess we just don’t love the carbs and spend the carbs on other bad things for us! Haha!

    I’m making salmon for dinner tonight, Kristi! I try to make it about once a week because my son is a huge fan. I do sometimes keep some in the freezer and need to plan ahead more like that. The freezer has been my new best friend in the last year or so! : ) Love your meal ideas and lighter ones sure are welcome. This is a meal I’d be thrilled to see at the table any day or night.

    Oh, lady, I started a new diet this week, so you are speaking my language!
