These Tuscan Tuna Tea Sandwiches are healthy, light and refreshing for summer – filled with fennel, basil, red onion and fresh lemon with no pickles nor mayonnaise! They go famously with a glass of ice cold Iced Tea Lemonade.
Last week, I shared the story about my Grandmother’s devoted love of Iced Tea and how by right, I am “Iced Tea Powered” because of it.
If there were two things that I knew my Grandmother would have in her kitchen come lunchtime – it was Iced Tea and Tuna Sandwiches. My Grandma loved her tuna sandwich every day at lunch!
For a long time, I was not a fan of the standard issue Tuna Sandwich, finding it to bland for my taste. But, in honor of her (much like the cookies), I’ve freshened up that Tuna Salad to be healthy, light and more flavorful.
These sandwiches are refreshing, with a pop of freshly squeezed lemon, that goes famously with Iced Tea Lemonade. You’d think the two were made for each other!
What you’ll love about these Tuscan Tuna Tea Sandwiches, is that they skip the pickles and the standard issue mayo/mustard mix (ugh, heavy), and bring a whole new level of flavor with fennel, red onions, fresh basil, capers and lemon juice.
Served on a thin-sliced, multi-grain bread, and cut into bite-sized tea sandwiches, these Tuscan Tuna Tea Sandwiches are perfect for lunch, a snack, or an afternoon Iced Tea party – which is so perfect for summer! I can’t think of anything more summery than that pop of lemon flavor! Can you?

Every summer, on my patio, you’ll see a pitcher of Iced Tea brewing naturally by the heat of the sun. I love to watch it go from clear water to the rich, amber, tea color, which tells me when it’s ready to drink. Just thinking about it makes my mouth water.
The Bigelow Iced Tea Lemonade doesn’t need this sun-drenched steep time, it can be ready within 10 minutes. But, I prefer to brew it this way, because it brings back such fond memories of how Grandma used to make it. It reminds me of Grandma and I sitting on her back porch, with a cold glass of Iced Tea in hand, munching on tuna sandwiches, enjoying a Sunday afternoon.

Another one of my favorites, is their Iced Tea Lemonade with Pomegranate flavor.
With a tea garden that large, what flavor do you hope they are working on next?
- ¼ cup fresh fennel (leaves only), finely chopped
- ¼ cup red onion, finely chopped
- ¼ cup fresh basil, finely chopped
- 2 tablespoons drained capers
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons extra-virgin olive oil
- ¼ teaspoon black pepper
- 2 (7-ounce) cans albacore tuna (in water), drained
- ¼ cup roasted red bell peppers, drained and chopped
- 4 to 6 slices thin-sliced multi-grain bread
- Combine all ingredients, through red bell peppers, into a medium-size bowl and toss until thoroughly mixed. Spread tuna mixture on 2 to 3 slices of bread, and top with the other bread slices. Cut each sandwich into 4 equal portions and serve.
